It serves a somewhat similar purpose as a Sheet bend, a Double sheet bend or a Heaving line bend, and may be used to throw a thick line over with the help of a thinner line at the end of which there may be a weight such as a Monkey fist or a Heaving line knot.

Before cooking chops, trim of all exterior fat; then dice fat and saute it in a small saucepan or skillet over medium heat until it turns into golden brown, crisp cracklings . ( This will take about 20 minutes and may be done ahead of time . ) Use a slotted spoon to remove cracklings and drain them on a double sheet of paper towel.
