| 21. | Sprinkle salt on flesh side of salmon.

| 26. | Cook the fish flesh side down over medium-high heat until it is almost cooked through and nicely browned.

| 27. | Place fillets, flesh side only, in about 4 tablespoons of the crust mixture and press crust into flesh.

| 28. | Combine salt, sugar, 1 tablespoon peppercorns and 1 tablespoon coriander seeds, and sprinkle over flesh side of fish.

| 29. | Press down on fillet as it cooks to minimize curling, and sprinkle flesh side with salt and pepper.
