I tasted one-year-old unblended brandies from seven varietals, including muscat, which had exactly the flowery aroma of Muscat de Baumes de Venise, a sweet wine from the Rhone Valley; viognier, which had a touch of muskmelon in the flavor; pinot noir, underdeveloped but robust, and zinfandel, pleasantly peppery on the nose as well as the palate.

The class tastes butter and margarine side by side ( mouth feel ); cranberry juice ( for its sourness and " pucker power " ); Schweppes tonic water, followed by the diet version ( to see the effect of bitterness with and without saccharin ); V8 vegetable juice, with and without salt ( a product that tastes unblended without salt ); and then Smucker's Concord grape jelly, regular and reduced sugar ( for the effect on taste of removing sweetener ).
