| 1. | 3 egg yolks that have been at room temperature for 1 hour

| 2. | Stir several spoonfuls of this mixture into the beaten egg yolks.

| 3. | Scrape the garlic into a bowl and add the egg yolk.

| 4. | Blend a small amount of the custard into 2 egg yolks.

| 5. | Add one egg yolk at a time ( three minutes ).

| 6. | Whisk together the sugar and egg yolks in a large bowl.

| 7. | 1 egg yolk whisked into 2 tablespoons spring water, for glaze

| 8. | Whisk the egg yolks with the sugar in a large bowl.
|
| 9. | In a saucepan combine 8 egg yolks and half the sugar.
|
| 10. | Add 1 / 2 cup sugar to egg yolks and beat.
|
