| 5. | Turn out on a floured board and knead a few times.

| 6. | Knead on a lightly floured surface and divide into 20 pieces.

| 7. | Remove dough to a floured work surface and divide in half.

| 8. | Gently smooth dough into ball on floured cloth-covered board.

| 9. | Mark a deep cross in the top with a floured knife.

| 10. | Turn onto a floured work top and knead quickly and lightly.
